Try this recipe for hummus, a regional favorite featured in our recent article on Samaria, Israel.
3 cloves garlic, peeled
2- 15 oz cans of Chickpeas (Garbanzo Beans), drained
1 cup extra virgin olive oil, plus some to garnish
1 cup tahini paste
2/3 cup lemon juice
1 Tbsp. salt
Roasted garlic, whole chickpeas, lemon zest, roasted red pepper (optional additions)
- Place garlic in a food processor and chop thoroughly.
- Add garbanzo beans and blend into a paste.
- Pour in 1 cup olive oil, tahini, lemon juice, and salt. Blend until smooth and creamy.
- Serve in a bowl and garnish with a drizzle of olive oil and paprika for the look or more authentic sumac for taste. For more flavorful versions spoon some roasted garlic, lemon zest, or roasted red pepper blended into a paste on top or add a two or three whole chickpeas.
